Abstract | Due to coronavirus (COVID-19) pandemic, the world’s restaurant industry has encountered unprecedented challenge. Therefore, this paper aims to investigate the new normal of restaurant during the COVID-19. Moreover, the paper also explores whether the E-Consumption Card (EC Card) which is a temporary consumption subsidy granted by Macao SAR government to Macau residents under “the Consumption Subsidy Scheme” influences different stakeholders such as restaurant operators, employees, customers and food suppliers in Macau. A qualitative approach was adopted and different stakeholders from restaurant industry were interviewed in the study. The findings of the present research provide the practical and innovative strategies to the restaurant operators. Thus, they can have deeper perceptions for the need and dining behavior of customers during the COVID-19, and the restaurant operators can also obtain up-to-date direction for operation and management of the restaurant by understanding the “New Normal” concept which can be applied into their business. |
